Ingredients
- watermelon cubes2 cups
- Handful fresh mint leaves
- Juice of 1/2 lime
- Salt pinch
- mashed chickpeas1/2 cup
- avocado, mashed1/4
- whole wheat tortilla1
- Handful mixed greens
- Black pepperto taste
Steps
- 1.Blend watermelon, mint and lime juice until smooth and serve over ice.
- 2.Mash chickpeas with avocado, salt and pepper to make a spread.
- 3.Spread chickpea mix on tortilla, top with greens and roll up.
- 4.Serve with a glass of watermelon mint juice.
