Light quinoa salad full of herbs and cucumber, served with a cooling cucumber lime juice for minerals and fluids.

Ingredients
- cooked quinoa (about 1/4 cup dry)1/2 cup
- chopped parsley and mint mixed1/2 cup
- cucumber, diced1/2
- diced tomato1/4 cup
- olive oil1 tbsp
- lemon, juiced1/2
- Salt and pepper
- cucumber, juiced1/2 large
- lime, juiced1/2
- water2 tbsp
Steps
- 1.Combine cooked quinoa, herbs, cucumber, tomato, olive oil, and lemon juice in a bowl; season and toss.
- 2.For the drink, juice cucumber and lime, stir in 2 tablespoons water and ice.
- 3.Plate tabouli and serve cucumber lime juice chilled.
- 4.Store leftovers separately; dress salad just before eating if making ahead.
