A cool, protein-rich lentil salad tossed with cucumbers, red onion and an herb yogurt dressing filling without increasing body heat.
Nutrition per serving
Ingredients
- cooked green lentils (about 1/3 cup dry)3/4 cup
- cucumber, diced1 small
- cherry tomatoes, halved1/2 cup
- red onion, thinly sliced2 tbsp
- arugula (or mixed baby greens)2 cups
- plain Greek yogurt3 tbsp
- lemon juice1 tbsp
- chopped fresh dill1 tbsp
- olive oil1 tsp
- Salt and pepperto taste
Steps
- 1.If needed, rinse and cook lentils until tender but not mushy; drain and chill.
- 2.Whisk yogurt, lemon juice, chopped dill and olive oil; season lightly with salt and pepper.
- 3.Dice cucumber, halve tomatoes and thinly slice red onion.
- 4.Toss chilled lentils with vegetables, arugula and dressing until evenly coated.
- 5.Serve chilled or at cool room temperature; garnish with extra dill if desired.
