Ingredients
- ripe tomatoes3
- cucumber1/2
- red bell pepper1/4
- garlic1 small clove
- olive oil1 tbsp
- apple cider vinegar or lemon juice1 tbsp
- chickpeas (drained, rinsed)1/2 can
- spinach leaves1 cup
- Handful fresh basil leaves
- Salt and pepperto taste
Steps
- 1.For gazpacho juice, roughly chop tomatoes, cucumber, bell pepper and garlic; put in blender with olive oil and apple cider vinegar and blend until smooth.
- 2.Taste and season with salt and pepper; chill or serve over ice.
- 3.For salad, toss chickpeas with spinach, torn basil, a squeeze of lemon, 1 tsp olive oil, salt and pepper.
- 4.Serve gazpacho in a glass or bowl alongside chickpea salad; scoop salad with bread if desired.
