Hydrating melon and mint juice with a savory tofu scramble for protein and savory breakfast satisfaction.
Nutrition per serving
Ingredients
- cantaloupe or honeydew cubes1.5 cups
- Handful fresh mint
- Juice of 1/2 lime
- water or coconut water6 oz
- block firm tofu crumbled1/2
- turmeric1/4 tsp
- diced tomatoes1/4 cup
- olive oil1 tsp
- Salt and pepper
Steps
- 1.Blend melon, mint and lime with water until smooth and chill.
- 2.Heat oil in a pan, add crumbled tofu, turmeric and diced tomatoes and cook until heated through; season with salt and pepper.
- 3.Serve tofu scramble alongside a glass of melon mint juice.
- 4.Garnish scramble with chopped parsley or cilantro if desired.
