Quick pan stir fry of mixed veggies on quinoa topped with a fried egg for extra protein.
Nutrition per serving
Ingredients
- cooked quinoa1/2 cup
- mixed vegetables (bell pepper, onion, mushrooms, or frozen mix)1 cup
- egg1 large
- low sodium tamari1 tbsp
- oil1 tsp
Steps
- 1.Heat oil in a skillet over medium-high heat.
- 2.Add mixed vegetables and stir fry 4–5 minutes until tender.
- 3.Push veggies to side, crack egg into pan and fry to desired doneness.
- 4.Stir tamari into vegetables, plate over warm quinoa and top with fried egg.
