Ingredients
- boneless skinless chicken breast (about 2 small breasts)10 oz
- cooked black lentils (cooled)1 cup
- cherry tomatoes, halved1 cup
- cucumber, diced1/2
- red onion, thinly sliced1/4 cup
- chopped parsley2 tbsp
- olive oil2 tbsp
- lemon juice1 tbsp
- smoked paprika1 tsp
- chili flakes1/2 tsp
- Salt and pepperto taste
Steps
- 1.Season chicken with smoked paprika, chili flakes, salt, and pepper.
- 2.Grill or pan-sear chicken 4–5 minutes per side until cooked through; rest 5 minutes.
- 3.Toss lentils, tomatoes, cucumber, red onion, and parsley in a bowl.
- 4.Whisk olive oil and lemon juice; toss with salad and season.
- 5.Slice chicken and place atop lentil salad; serve warm or room temperature.
