Ingredients
- whole-wheat mini bagels, halved2
- eggs4 large
- smoked salmon, sliced4 oz
- light cream cheese2 tbsp
- arugula1 cup
- fresh dill, chopped1 tbsp
- lemon juice1 tsp
- olive oil or butter1 tsp
- Salt and black pepperto taste
Steps
- 1.Toast bagel halves until golden.
- 2.Whisk eggs with pinch of salt and pepper.
- 3.Heat oil in skillet over medium, scramble eggs quickly (2–3 minutes).
- 4.Spread cream cheese on each toasted half.
- 5.Top with arugula, scrambled eggs, smoked salmon, dill, and lemon juice.
- 6.Serve immediately, season to taste.
