A quick, pantry-friendly open sandwich with smashed chickpeas, creamy avocado, lemon and crunchy red onion on toasted whole-grain bread.

Ingredients
- (15 oz) chickpeas, drained and rinsed1 can
- ripe avocado1
- lemon juice1 tbsp
- plain yogurt or mayo (optional)2 tbsp
- whole-grain bread, toasted2 slices
- finely chopped red onion2 tbsp
- Salt, pepper, and paprikato taste
- Optional: handful of arugula or spinach
Steps
- 1.In a bowl, lightly mash chickpeas leaving some texture.
- 2.Mash avocado with lemon juice; fold into chickpeas with yogurt.
- 3.Season with salt, pepper, and paprika; stir in onion.
- 4.Divide mixture between toasted bread slices; top with greens.
- 5.Serve immediately.
