Easy one-pot lentil soup with carrot and onion served with toasted bread.

Ingredients
- red lentils (about 200 g)1 cup
- onion, diced1 medium
- carrot, diced1
- garlic cloves, minced2
- water or low-sodium vegetable broth4 cups
- 1 tsp ground cumin, salt and pepperto taste
- bread for toasting2 slices
Steps
- 1.Heat 1 tbsp oil in a pot and sauté onion and carrot until soft, 4–5 minutes.
- 2.Add garlic and cumin; cook 30 seconds until fragrant.
- 3.Add lentils and water/broth; bring to a boil then simmer 15–20 minutes until lentils are soft.
- 4.Season with salt and pepper, mash slightly for thickness, and serve with toasted bread.
