A kid-friendly, creamy cheese pasta tossed with sweet peas — ready in under 15 minutes. Mild cheddar and a touch of milk make a smooth, comforting sauce that’s easy for little appetites.

Ingredients

short pasta (penne, rotini or shells)
160 g
frozen peas (about 3/4 cup)
120 g
shredded mild cheddar (about 2/3 cup)
60 g
120 ml whole milk
1/2 cup
15 g butter
1 tbsp
salt (adjust to taste)
1/4 tsp
Pinch black pepper
grated Parmesan (optional, for topping)
1 tbsp
set aside while draining
60 ml reserved pasta cooking water (about 1/4 cup)

Steps

1.Bring 1.5 L (6 cups) water to a boil, add 1/8 tsp salt, then add pasta and cook according to package until just shy of done (check time on package).
2.During the last 2 minutes of cooking, add the frozen peas to the pot so they cook through with the pasta.
3.Reserve about 60 ml (1/4 cup) of the starchy cooking water, then drain pasta and peas.
4.Return pasta and peas to the warm pot off the heat; add butter, milk and shredded cheddar, stirring until melted and smooth. Add reserved water a little at a time to loosen if needed.
5.Season with the remaining 1/8 tsp salt and a pinch of black pepper; divide between plates and sprinkle optional Parmesan on top.
