Ingredients
- lean flank steak or sirloin (trimmed)8 oz
- dry black beluga lentils (about 1 1/4 cups cooked)1/2 cup
- mixed salad greens2 cups
- cherry tomatoes, halved1/2 cup
- cucumber, diced1/2 small
- olive oil1 tablespoon
- red wine vinegar1 tablespoon
- ground cumin1/2 teaspoon
- Salt and pepperto taste
Steps
- 1.Cook lentils: rinse, simmer in 1 1/4 cups water 20–22 minutes until tender; drain.
- 2.Season steak with salt, pepper, and cumin.
- 3.Heat 1 tablespoon oil in skillet over medium-high heat; sear steak 3–4 minutes per side for medium, rest 5 minutes, slice thin.
- 4.Toss greens, tomatoes, cucumber, and lentils with vinegar and a pinch of salt.
- 5.Divide salad into two bowls, top with sliced steak and serve.
