A quick, Insta friendly pav bhaji served deconstructed as a colorful bowl with buttery mashed veg, melting cheese, and toasted pav for dipping.

Ingredients
- Potato 1 small (about 120 g), peeled and diced
- Cauliflower florets 50 g
- Carrot 1 small, diced
- Frozen or fresh peas 1/4 cup
- Onion 1/2, finely chopped
- Tomato 1 medium, chopped
- Green bell pepper 1/2, diced
- Pav bhaji masala 1 to 1.5 tsp
- Butter 1 tbsp
- Oil 1 tsp
- Grated cheese 1/4 cup
- Lemon wedge, chopped coriander for garnish
- Pav buns 2 (halved and toasted)
Steps
- 1.Boil potato, cauliflower and carrot until very tender; mash lightly and set aside.
- 2.Heat oil and 1/2 tbsp butter; sauté onions until soft, add bell pepper and tomatoes and cook until pulpy.
- 3.Add mashed veg, peas, pav bhaji masala and 1/4 cup water; simmer 5–7 minutes and adjust salt.
- 4.Stir in remaining butter and transfer to a bowl; sprinkle grated cheese on top to melt.
- 5.Toast pav buns in a pan with a little butter until golden; serve alongside the bhaji bowl with lemon and coriander.
